Changing carpets is a minimal easy thing for disney as it has miles and miles of fabric it can get its hands on but taking the time to create a custom menu item that uses wagyu beef is no joke. If it was that common on disney property we would see wagyu beef a lot more. Then again I would not put it above disney to use some cheap beef they got their hands on while labeling it as wagyu.
There is wagyu and there is wagyu. The fact that this is a braised dish leads me to believe that this is lower grade (1 or 2) wagyu, and is likely "American Wagyu".
If you have some A5 Kobe, why would you braise it?
These items are all things that can easily be thrown together using Sysco products. Even the so-called "house made giardiniera"
Here is my guess for the house made giardiniera
Mix together the following in a Cambro
1 2LB Sysco Carrot, Diced, Grade A
1 #10 Can Sysco Arrezzlo Imperial Pepper Red Roasted Pieces
1 5LB Sysco Imperial Fresh Onion Diced
1 5LB Sysco Imperial Fresh Celery Diced .375"
1 5LB Sysco Pepper Greens Diced Fresh
1 5L Sysco Imperial White Wine Vinegar Italy
1 1LB Extra Fine Cane Sugar (From Sysco, but in 50lb sacks)
1 6oz Sysco Seasoning Italian
Let sit overnight in the walk in - serve it the next day to guests as "House Made Giardiniera"
Disney is not in the back hand dicing vegetables they harvested from the farm for these kinds of meals
