Alot of those sound really good.

I hope, since Disney makes up it's own dates for seasons anyway, they extend the "summer" through a couple of weeks in September (aka Halloween season), as I will miss this if not.

How does this work exactly? Especially since most of these places are sit down restaurants? Do you just walk up to the hostess and tell them you want the brew and bbq deal and they just bring it to you right there?

These are usually just a jointly promoted "theme". Disney Springs says "Hey, we have some ad dollars we will invest in this promo, you want in?" And the restaurants add a dish that matches the theme, or pick one they already have on their menu to highlight.
