I am going to be in the parks starting Sunday, and I was curious: when does Disney begin removing the Christmas stuff and when will the removal be completed?

According to @JenniferS the Epcot tree was gone on Saturday.
I didn’t even know where it was (had been) until @Eric1955 pointed it out. As of Saturday, it was just a pretty flower bed.

MK tree was still up yesterday, as seen from the Monorail.

Ditto for the trees at the Poly and Grand Flo.

The tree at Epcot was down as of Saturday and with the exception of Magic Kingdom, history tells us you should expect most everything else to start going away right after 1/1/19. The historical exception to that is Main Street in the Magic Kingdom which they leave up until after the marathon and then it disappears rather quickly as well.

Christmas decorations were still up, a long with Christmas musuc playing in the park, when we visited AK during MLK holiday in either 2016 or 2017.
