If I have 5 day passes (no hoppers), can I use 2 of them to go to two parks in the same day? If so, can I also book fast passes for both in advance?

Multi day tickets no you cannot do this unless you have the park hopper option. Single day separate individual tickets yes (like 2 - 1 day passes), but no not with your 5 day pass.

I don't really understand the difference. So if I have 5 day passes, I can't choose to go to the parks for 4 days and use two passes for one day?

No. Disney doesn’t allow this. If you want to go to two parks in one day you need to add the park hopper option or have two separate tickets.

If you have five individual one day passes you can burn an additional day to enter the second park. If you have a five day pass with no parkhopper you can not enter another park with that pass on that day.
I think that that is what the OP is asking, can they use two separate tickets in one day at two parks. Yes they can use two separate tickets in one day, but they can only secure three fast passes for one park in that day.
You will have to use your first three passes in one park and than you can get additional fast passes at any park, one at a time, after the first three are used or the time for their use has passed.
