I did this once!!! It is unbelieveable! I would reccomend sitting in the cockpit on the EPCOT loop. Not only is the view great, but just ask the monorail driver anything about EPCOT, and I bet he'll know the answer.:D

I've never been to WDW right at Christmas time. I would assume from all that I have read that it does get very crowded. Figure school is out=big crowd at WDW. Honestly I would reccomend to you to book your stay for the beginning of December. This is what we always do. It is hardly crowded...
