I always get the park hopper. I like the freedom of being able to go where I want. If one park closes early we might then go to the one that is open later, or like someone else said, if one park seems busy just go to a different one. I think its a nice option :)

Character dining is fun!! We had a great time at the Playhouse Disney one. You get to dance with the characters! My daughter who was 4 then loved it!

EPCOT in the lighted arch way thing and in front of the big tree with the presents...also we got a nice pic in the Grand Floridian in front of the tree there...I think that was photopass.
