It doesn't have to just be the ship. It can be an entire hangar with droids going about, etc. Think about where the ship was first seen on Tatooine, or the different docking bays in Empire Strikes Back. Found some random artwork online too -

Haven't been there in awhile but first thing that came to mind is Whispering Canyon Cafe in the Wilderness Lodge.

Splash Mountain. My company would keep it in great condition and the perception of the company would have to be improved if it was associated with that ride.

I did that last year and it was actually pretty awesome. It's also great as a "beginner's" half-marathon. The focus is more on fun than running.
