Keep checking. We were able to get last minute (as in, the day before) reservations for Prime Time at a prime dinner time slot (7pm). I also saw Sci-fi availability when I was booking. People cancel all the time.

Definitely do Akershus - much easier to get a reservation than in the castle and IMHO just as fun for the kids. There are princesses everywhere for meet and greats, but they can try to FP some as well.
