Yup, you should be more than fine over the weekend in Paris, pretty much everything will be open (you may find shops close earlier on a Sunday afternoon/evening) but in general things will be open.

You will get a lot more bang for your back if you can get to the parks during a weekday, the weekends will be very busy. Keep an eye on the ticket prices, the Annual Passports are very reasonably priced and can work out cheaper if you are spending a few days there based on the discounts you get...
