I was in the same boat a few years back, flew into LV and was going to fly our of LA, but I found it cheaper to just return back to Vegas with the car and fly from there. The rental was cheaper and so was the flight. My plans were a bit more flexible so I could do this, yours might not be.

We normally go in the first two weeks of May, the weather can be beautiful and the crowds aren't too bad. MK is still pretty busy but no where near the summer time busy.

We took our son last may and he just turned 6, without a stroller. He complained a couple times but he was fine. We rested a bit more than normal, but that could be just us getting older.
