WDI has been posting videos about the background of their imagineers more recently. That was probably more of the focus than actually showing the ride (since it looks like there’s not much to show in the building anyway)

Looks like everything is still gutted. Wonder if they’ll install all of the show scenes and test the ride by summer 2025

plus, If you get rid of too many things, you'll discourage a lot of people from revisiting. Half of my favorite rides have been gutted/going to be gutted, so I don't see as much of a reason to come back to Disney in contrast to 2017 because a lot of the reasons I went are gone now.

Regarding my actual thoughts on this, I'm glad Soarin got some TLC, but I don't like the new Eiffel tower scene where you just kinda look at it from a distance. There was just a unique feeling you had scaling the tower from the bottom. At least the bendy tower is no more lol.
