We actually really lucked out. We booked this week and are going Dec 27-Jan 4th and got everything we wanted. Le Cellier and others. Just keep calling you never know when there will be a cancellation!

I think it is fantastic because then you don't have to worry about how much your food costs. You can just eat what you like and you already know how much you paid. Nice and simple and stressfree!
