I do not have sources to back this up but typically if anything, attractions tend to reopen after the said date more than before, that being said this isnt always the case and there do tend to often be soft openings a few days before.

January/Febuary are great because the crowds are down a lot and the weather still is awesome for the most part. (ok i'm from way north so maybe others think it's a little cold, 60s, 70s, but it doesn't rain much, lots of sun). Lack of crowds really is awesome, it just makes the time so much better.

Yeah aside from the difficulty, that would be kinda strange. The beginning of the DL version is more like Louisiana Bayou than Carribean and some scens just wouldn't work well.

Cosmic Ray's Starlight Cafe in Tomorrowland is great but I guess they now have angus burgers at Pecos Bill's in Frontierland so probably there. The other food is pretty much the same at both of them.
