In the past few years, the best days to go were generally the weekends when Deluxe Passes were blocked out. There might be a few off season weekdays that aren't bad, but if you went on an offseason weekday right after SoCal passes were blacked out for a long time, it would be extremely crowded.

In SoCal, most visitors have the cheapest pass so those days always tended to be extremely crowded. Plus the earlier closing times made things worse also.

Pent up demand is how Disney has gotten away with the high prices for so long. If the pent up demand was lasting the way they wanted it too, they wouldn't have introduced the SoCal Discount ticket and whatever Magic Key ends up being so soon.
