Most likely reason is because the structure and frames are going to be reused. It would be rather risky to just leave them there, with a different project team, if this project wanted them.

I agree, personally think it'd be cool if the sign was added into the coaster so you fly under it like the current Hollywood sign. doubt it'd happen but would be cool. would also think it'd be cool if the Hollywood sign was replaced with the muppet show signGuessing that spot will just be pizza again, just Monsterfied. I really doubt PizzeRizzo finds a new home elsewhere in the park, so the sign belongs in some archive closet or on ebay.
Besides Tropical Amercias opening in 2027, all we can do is speculate on dates for the other large projects. I'm guessing we'll get additional timeframes at D23 and Monstropolis will be on deck.
Also in that photo, Mama Melrose's signage is still there. I wonder if it's just a case that they haven't started work on the facades of that side of the courtyard, instead focusing on the theater sideYeah, here's the pic that I had forgot to bring up..

same question, hoping the songs are more contemporary so it contrasted to gotg. personally want hey ya, mr. brightside, ride, some nights, and other songs in that vein, with the electric mayhem twist.When are we getting that new track list?
