It does seem theatre at the hotels. The DLH is the only hotel I've seen it taken seriously. Although I've heard for Bastille Day and NYE they take it a lot more serious across the whole resort.

A few drones fail every few shows, occasionally you’ll spot them on odd roofs around DLPs fantasyland the next day. So I don’t think they’ll appear above guests for a long while.

The lake show I’m still betting is a version of fantasmic, they bought the barges from Tokyo. It could have a nice big drone dragon.
If you haven’t seen - Bastille day had a mix of fireworks and drones that was very impressive too
Paris is constricted on how many 'loud' fireworks shows it can have a year outside of NYE + Bastille. It has several credits it can use (and did use for the end of the 30th night).
However it generally avoids using them if it can to be a good neighbour.
