This recipe has three main steps. The sauce, the poach, and the final fry.

Ingredients

2 cups Soy Sauce
16 oz light brown sugar
1 whole head of garlic
4 cups of cold water
1 or so lb of chicken wings

Sticky Wing Sauce
1 cup of light brown sugar
1/2 a head of garlic
1.25 cups of Soy Sauce

Mustard Sauce
1/3 cup Mayo
2 tbls Dijon Mustard
2 tbls Yellow Mustard
1 tbls Rice Wine Vinegar (unseasoned)
2 tbls Honey
1/2 tsp Louisiana Style Hot Sauce

Micro Artisan Lettuce, or Baby Romaine (either works)
White Onion

Step 1) Add all the ingredients for the Mustard Sauce to a bowl, and whisk with a fork until well mixed. Set aside.

Step 2) Add the Poaching ingredients to a pot and bring to a boil.

Step 3) Prep the chicken wings.

Step 4) Add the chicken wings to the poaching liquid and cook on medium high for 20 minutes.

Step 5) Remove the wings with tongs and toss the poaching liquid. Set the wings aside.

Step 6) Add the Wing Sauce ingredients to a medium saucepan over medium heat.

Step 7) Bring to a boil, then lower to medium heat and saute for about 5 minutes, stirring often. Then using an immersion blender (or a normal blender) blend until smooth (if using a normal blender, return it to the pot after blending).

Step 8) Fry the chicken wings in a deep fryer or pot set to 350 degrees for about 2 - 3 minutes, until the wings start to caramelize and brown.

One of the best burgers I've had at Disney, here is the dish I'm attempting to copy, with a few of my own minor modifications.

For this recipe I'd decided to spice up the fries a bit with bacon and a blue cheese cause. There are three main steps to this. The ketchup, the fries and the burger.

Chipotle Ketchup

6 oz can of Tomato Paste
1/4 cup Honey (I chose wildflower, but any type will do)
1/2 cup White Vinegar
1/4 cup Water
1 tbsp of chopped and strained Chipotle Peppers
3/4 tsp Kosher Salt
1/4 tsp Onion Powder
1/8 tsp Garlic Powder

1 cup blue cheese crumbles

1 tsp fresh black pepper

Step 2) Melt the butter over medium heat in a small to medium saucepan and then saute the shallots and garlic for about 4 to 5 minutes.

Angus Hamburger Patties
Kaiser Rolls (Disney uses these, but really any burger bun would work fine...but I find the texture and solidity of the Kaiser works well with the egg)
1 egg per sandwich
1 slice of bacon, halved, per sandwich
Iceberg Lettuce
Fresh Tomato
White or Red Onion
Tillamook (or some other extra sharp) Cheddar
Butter

Step 1) Preheat your broiler to low. Peel off a leaf of the Lettuce, Slice the Tomato, Slice the onion. Set Aside.

As usual, even with a simple cheeseburger, you've elevated a classic to a much higher level! There were quite a few steps in that process, and plenty of ingredients. (The only thing I'd leave out is the bleu cheese part, but that's only because I don't like bleu cheese. I completely realize you're imitating a recipe, though, so I know you had to put that in, and many people do like bleu cheese.)

The amusing part of seeing and reading about these recipes you share is that I see them within a short time of getting up, first thing in the morning. Normally, I would not want any substantial food at this hour; but when I look at your pictures, I'm dying to reach through the screen and start wolfing down your food!! :D :hungry:

BLT Soup

Off to the Sci Fi. Put on your old black and white B-Movies and cook along!

This dish is no longer on the menu, but it is one I adored on my visits.

That's what I'm replicating.

Ingredients:
1 Baguette
Dried Oregano
Bacon
Iceberg Lettuce
4 large ripe tomatoes
6 5.5 oz cans of spicy V8
Around a dozen fresh basil leaves
1 cup of heavy cream
4 tablespoons of unsalted butter and more on the side (about 1 tbls)
Kosher salt
Fresh Ground black pepper

Step 1) Bring a pot of water to a boil, then add the tomatoes after rinsing and removing any labels.

Step 2) After boiling for around 30 seconds, remove the tomatoes. Peel off the skins, and chop.

That looks so delicious!! Again, I can't figure out why they would remove a tasty soup like that from the menu. I can understand seasonal changes from time to time, but to just flat out remove and not return a soup like that is frustrating. From your directions, I think even I could make this at home!! :p :hungry: (P.S.: I also love anything that includes broiled, crusty bread with melted butter and herbs, for dipping!!)

Biergarten day! (though, not for dessert)



We'll start with the sides. These all need to be made in advance by at least an hour and chilled to let the flavours marinate.

Lets start with:

Gurkensalat (Cucumber Salad)

Ingredients

1 cucumber (english if you can find it)
1/2 of a small red onion
4 tablespoons of cider vinegar
1 tablespoon of sugar
1/4 tsp of kosher salt
1/4 tsp of fresh ground black pepper
3 tablespoons of chopped fresh dill

Step 1) Thinly slice the cucumbers and 1/2 of a red onion. Place in a bowl and set aside.

Step 2) In a small bowl, add the vinegar, sugar, salt and pepper. Stir until the sugar is dissolved.

Step 3) Add the dressing and the dill to the bowl with the cucumbers and red onion. Toss well. Allow to marinate for at least one hour.

That looks delicious, and this is something I will definitely make for the hotter months ahead. It looks like a really easy recipe, that packs a yummy fusion of flavors. I like cucumbers, and really enjoy cucumber salad--so much better than cole slaw, for example. Thanks for sharing with everyone again!! :hungry: :happy:

No one noticed at Publix, and I've actually seen lots of people check out with similar "menus" over the years there.

Frozen food is quick, and convenient. Better for you than fast food (theoretically, though I may or may not be planning a future Fast Food challenge), and can be cheap.

The primary purpose of this week's challenge is...how good is the food? And, do I lose any weight (I am not trying to lose weight with this, but many do, and that's what they market them as being able to do)?

Again, I'll start in the morning. Few hours to go before my wonderful breakfast!.
I can't wait to see how this works out.

Week 1 - Day 3 - Meal 3 - Salisbury Steak

Well, after a day with lunch off schedule (something I won't do again tomorrow, that's for sure!), I am ready for a hearty dinner!

As a note, I am now completely confident that I was light headed because of low blood sugar/hunger, as I felt better within 10 minutes of eating my very, very late lunch. And, while the portion was small, it's interesting to note that I actually ate dinner late tonight as well, and didn't feel hungry.

Even so, I am ready for dinner.



This is a "freezer box" classic. I mean, one of the most iconic "TV Dinners" ever is this!

And, who doesn't like mac and cheese? So, lets see what this has to offer! "Salisbury Steak in a savory onion gravy with creamy macaroni and cheese". Hrm...



4 minutes, 30 seconds later and it's time to stir. This is the longest cook time I've come across so far (not that 4 minutes 30 seconds is all that long!)



Not looking too bad. Smells pretty good! Another quick trip through the microwave and a short rest, and this is what we've produced.



Not to shabby! And dinner is served!



So, how was it?

Great! Really great! This is nice, a whole day where every meal was pretty darned tasty!

The steak has a good texture, and while it's a bit tougher than a fresh Salisbury steak would be, it didn't taste frozen. It's extremely well spiced.

The gravy, while gelatinous, is certainly "savory". It does a good job of "simulating" a fatty beef gravy sauce. The onions are a nice touch. Combined with the meat patty, this was really nice. The only thing that could have kicked it over the edge would have been some mushrooms (@Bob would disagree, but he's a picky eater).

Overall, quite a great little piece of meat, for the 1.99 I spent on it.



The mac and cheese was decent. Not as good as the boxed stuff with the packaged liquid cheese, but far better than the boxed stuff with the powdered cheese. It also had excellent seasoning, and I found that I devoured it quickly.



I mention seasoning a lot in these posts. I want to clarify, I mention this because I am going off the presentation from the package. I am not adding anything to these meals that is outside of their standard preparation instructions.

So, while some meals would have been much better with a touch of salt or some tobasco, feel that if I spiced them, I would not able to judge the quality of the meal properly. So, I've avoided all seasoning, and am commenting strictly on the product out of the box.

Time for dessert. Mango bar!



Again, not as good as the strawberry bar, but not bad at all. The mango was a nice taste, but I don't think the yogurt dip complimented it as well as the other flavors I've tried so far.

So, this is my least favorite of the 3 flavors I've had, but by no means was it bad!

I still really like these little frozen treats. In fact, I may be forming an addiction!

Overall, great dinner. And, a great day. Odd, since this is actually the cheapest day I've had so far!

I could easily see that working well. I found myself not disliking spam as much as I thought I would!
When we were first married we were dirt poor. I sautéed the spam added red and green pepper with onion, added the juice of the pineapple (the tidbits in a can) reduced and added the pineapple with paprika, served over rice. It filled us up, when we had many lean times.

BLT Soup

Off to the Sci Fi. Put on your old black and white B-Movies and cook along!

This dish is no longer on the menu, but it is one I adored on my visits.

That's what I'm replicating.

Ingredients:
1 Baguette
Dried Oregano
Bacon
Iceberg Lettuce
4 large ripe tomatoes
6 5.5 oz cans of spicy V8
Around a dozen fresh basil leaves
1 cup of heavy cream
4 tablespoons of unsalted butter and more on the side (about 1 tbls)
Kosher salt
Fresh Ground black pepper

Step 1) Bring a pot of water to a boil, then add the tomatoes after rinsing and removing any labels.

Step 2) After boiling for around 30 seconds, remove the tomatoes. Peel off the skins, and chop.

Step 3) Add all the ingredients to a medium sauce pan.

Step 4) Simmer over medium heat, stirring occasionally, for 20 minutes. Then puree with an immersion blender (or pour into a regular blender and puree, then add back to the pot).

Step 5) Season with salt and pepper, to taste, then simmer over medium heat, stirring occasionally, for another 10 minutes.

Step 6) Thinly slice the iceberg.

Step 7) Slice the bacon and render it.

Step 8) Place your broiler on hi, then slice the bread.

Step 9) Spread some butter on the exposed parts and sprinkle some dried oregano on it.

Step 10) Broil for a few minutes. Then put some of the soup in a bowl. Top with lettuce and the bacon, and submerge the bread into the soup.

That doesn't sound like a half-bad recipe, actually! Not that I've ever been a fan of spam, but the way you jazzed it up a little seemed to make the recipe edible! ;)

Well, time to bring this thread back from the dead!



A Week Of...Delivery Food Services! Lets start with Plated, shall we?

For those not familiar, lets back up and talk about recipe delivery services. There are a few dozen of them, with Plated and Blue Apron being the most popular. What do they do?

Well, they send you the recipes, and the ingredients (with limitations, which I'll get into, you still need to keep stuff in your kitchen to make these work).

The prices are reasonable, but I'll also analyze that later...

I have signed up for Blue Apron and Plated, for the start of this part of the series. Plated delivers me 3 meals, on Tuesdays. On Fridays, I get a series of meals from Blue Apron. The total cost for these I'll analyze later, but comes out to about $130 a week.

So, lets see what we get for that? Off to meal one!

PLATED - 3 Meals - Week 1

My first shipment came into my office. A nice small box, weighing 13 lbs. Emails were sent to me letting me know that my meals had shipped, though, as it came closer to 5p (I was looking to leave work around 6p), I got worried, and contacted tehir shipper (who is not UPS or Fedex, but a third party), and after a few minutes of hold was told my meal would be delivered before 6:30. So, I had to wait a bit longer.

Now, for most people, this wouldn't be a concern. All these services state that you can leave the box in reasonable environmental conditions (indoors, not outside in 100 degree GA summer heat!) for about 24 hours before you need to get them to their own refrigeration, but, I would really rather not do that...at least not for this first shipment. So, I waited rather than pick it up the next day.

Here's the box. Actually, rather small...

Now, mind you, I am on the "2 person, 3 meals a day" plan, which means I get 3 meals for 2 plates each. Now, Plated has a different model than many of the competitors (I will summarize this at some point), but, what Plated attempts to do is make each of your meals cost, you, about $12 per plate. I did spend some time reviewing different blogs and forums and youtube to try and figure out which is best, but each service seems to have their own positives and negatives, so these next few posts will revolve around the Plated service, as now I have 3 meals by them to review.

And, for "freezing", they don't rely upon dry ice, rather ice packs, more akin to "blue ice" that you would use to keep your lunch cold. They say that you can leave the box at your doorstep for 24 hours, and, frankly, I'd buy that with this sort of packaging (I do not think this with Blue Apron, but I'll get to that later)...

The Plated packaging is excellent, and the insulation inside the box works quite well. If you don't have a need for these ice packs, there is an easy way to return them and recycle them. I'm...not that environmentally conscious, rather this is about convenience and reduced food waste, for me, so I just threw them away (flog me later).

So, with that set up, lets get to the meals!

The box came with three recipies. Two meat based, one vegetarian. This seems to be a trend that Plated holds, for whatever reason, though I suspect cost control is part of it. You can, however, on their site, change your "meals" with limited options at any time before the box ships (about 10 days ahead of delivery date).

Plated Day 1 - Patty Melts (Part 1)

So, after opening the box and looking through the recipes, I decided I wanted something filling. Not that chicken is bad, nor is vegetarian, but I was quite peckish (having skipped lunch to wait for these meals), and really wanted some RED MEAT....so, lets start with something savory and classic! Patty Melts!

Oh my goodness, this recipe turned out amazingly good. The quality of the bread was surprising. It tasted fresh, but obviously wasn't. It was leaps and bounds above anything I'd find in the bread aisle, and really much better than the stuff I'd find at even high end market bakeries (by high end, I mean Fresh Market or Whole Foods...though, I must say that Whole Food's bakery has always disappointed me). It was certainly better than anything I'd find at my local Kroger or Publix, where I most often shop.

So, lets get into the recipe, shall we?

They send a wonderful card with some useful (and lots of useless) information. These recipe cards, actually, remind me of something I was a mail order participant in as a kid....I forget the name of the series, but they had two...one for cars, one for planes. Now they reside somewhere in my parent's attic.

Anyhow, these recipe sheets are colorful, decently written, and certainly worth keeping (as long as you like the recipe). A nice addition to the service. I stopped by Office Depot and picked up a binder and some dividers, and plan to keep all these recipe cards. That said, they also offer online recipe reference (in case you lose the cards) and even youtube videos (for some of the recipes and for some of the services).

I am...not an inexperienced cook, so I really didn't take much from the recipes...but, they are really nice. Especially for someone who is learning to cook, or is trying to expand their horizons.

I find their "hints and tips" rather useless, frankly. I also take issue with how they tell you to patty up the burger, but I'll get into that as we step through the recipe, ok?

So, the ingredients provided... Plated sends a few loose pack ingredients (labeled in bags) and then a larger pack of the smaller ingredients. I really enjoy this packing style. Everything is clearly labeled as to what recipe it belongs to, and it makes organizing it in the fridge by meal a breeze. But, after unpacking the larger pack of smaller items, here's everything Plated says I need for the meal.

I am actually shocked how few items this is. If you compare previous meals I've done here (or elsewhere), you'll see a whole counter full of ingredients. But, a lot of this is due to portioning. Plated has sent me only and exactly what I need to complete these dishes.

And, I must say, I find that attractive. I hate doing a dish where I only need 1/4 head of lettuce, but then have to figure out what to do with the other 3/4 head. If I lived in a household of 3 - 4 people, that would be less of an issue, but as a single person, cooking for myself, waste is a major issue. In fact, it's one of the things which has attracted me to these services, and decided to give them a try.

So, lets move on...

I didn't make too many tweaks to this recipe, as I wanted to test the actual recipes themselves, though I do disagree with their ideas about how to patty and fry the hamburgers, but I'll get to that...point is, from here forward, we are going to follow the recipe, with only commentary from myself here and there.

Step 1) Prepare Ingredients

Preheat the oven to 425. Rinse the produce and then prep the sweet potatoes by cutting them in half, then the halves in half, then the halves in half again, and then do it one last time (see pictures...this isn't how they word it, but this is a good way to get a nice "fry" from a potato of the size they sent me).

And the most labor intensive part of it, was the thyme. See, you have to get all these leaves off the stem. Unlike rosemary, thyme doesn't play well with the "squeeze down the stem" method, so you end up doing a few minutes of picking here. That's ok, just turn on some music and be done with it!

Step 2 - Coat the Potatoes

In a medium bowl, toss the chopped potato, 1 tablespoon of olive oil (yes, this you need to have on hand, they don't provide it), 1/2 teaspoon of kosher salt (you also need to provide this) and "cayenne pepper to taste". They did include the cayenne pepper in a baggie in the kit, so I used all of it, and I'd recommend that. I've made sweet potato fries like this before, and the spice of the cayenne really compliments the sweet potatoes. So, go heavy. (as in use all they provide, at least that's my recommendation). Toss all that in a bowl and mix thoroughly.

Step 3 - Bake the Potato Fries

Spread the fries out onto a foil lined baking or cookie sheet. Baking sheets are better for these sorts of applications as they have a lip...but, a cookie sheet would work fine. Drizzle any of the remaining oil mixture over the fries for maximum flavor!

Toss into the oven and bake for about 20 mins (in my oven it was more like 25 minutes until I got them to the crispness I wanted...you really can go for about 18 or so mins, then start checking them every 2 - 3 minutes to see when you think they look "right")
