That's exactly it. It's the atmosphere and the realism of experiencing these attractions AND getting to do it with fellow fans.
I am open about my dislike for the prequels and for a while, that was all everything seemed to be focused on, if people remember. When I went to my first Star Wars weekend, I was almost afraid to go because I thought it would all be about Pod racers, JENGO Fett and Clone Troopers. But to my happy surprise, Disney did such a great job of giving an equal amount of time to both series that I didn't mind seeing Padme walking around or any of the 'newer' jedi. It's getting to see everything meshed together into one great world. The Jedi Academy show is one of my favorite shows (despite it being more Prequel based), and I don't even have any kids. I just love to watch them experience something like that.
Long story short, whether the new movies fail or thrive, I think incorporating EVERYTHING star wars is fair and fun for everybody. You don't want to exclude fans of either set of films and you don't want to fully cater to one set either. Though my personal feeling is the original 3 are KING and the majority should be on them, I think it's great to incorporate all 9 movies into one large awesome Star Wars Fest.
And as long as one of the signature attractions isn't some 'test your Midichlorian count' ride, I will be content
