Sign up as soon as you get into the park it fills up quickly! If you have younger ones. The older one will enjoy watching it.

My two Kids (5 and 8 years old) wanna take Part at the Jedi Training Academy. As we are from Austria they don't speak and understand English. I just read that they will have to answere some questions at sign up. So what about non English speaking Kids. And my second question: is the sign up Station already open during morning extra Magic Hours?

The signs ups typically open as soon as the park does even on EMH.

Regarding the language barrier...I do not know officially, but based on what I have seen before my gut is telling me no. The kids have to follow fairly specific instructions and I am just not sure how they could do that if they can not understand the instructor.

If no one can give an official answer, I would at least give it a try. Just temper the expectations of your kids so they will not be crushed if the answer is indeed no. For all I know they might let you act as an interpreter, but I have seen dozens of these shows and never seen something like that happen.

It might help them if you (and they) watched some of the many online videos of JTA before you went. (Be sure to look at only the most recent ones, as the show has changed.) The kids could see exactly what they need to do, and perhaps learn enough of the typical instructions to be able to participate without the language barrier being a problem. Good luck! :)

Where should My padawans go to

When it was the Jedi Training Academy you would sing up in front of the stage at part open. Now that they have revamped it to the Trials of the Temple I'm not sure if the sign up process is the same or not.
Here is some additional info on the show.
