Food and Wine Question

We are leaving disney, the day the food and wine festival officially starts. What are the countries/kiosks like the few days before? Are they open? Or do they only start operating on the day the festival opens?

From what I can remember, the kiosks stay closed until the actualy first day of the festival. They will all be in place, but won't open until scheduled.

The kiosks open at 11am the opening day of the festival. We go down there at this time for this. It is so much fun!
