3/4 pound boneless, skinless chicken cut into 1/2 inch by 2 inch strips
Marinade
Dash of white pepper powder
salt and sugar to taste
1/2 cup of water
1/2 cup cooking wine
2 teaspoons sesame oil
Marinate the chicken; stir the marinade ingredients together in a medium bowl, add chicken & toss gently to coat. Let stand for 10 min.
Batter
3/4 cup all purpose flour
1/4 cup cornstarch
1 large tablespoon baking powder
1 egg white (beaten)
2/3 cup water
2 tablespoons oil
pinch of salt
Mix together flour, cornstarch, & baking powder
add egg white, water and oil
let the batter rest for 30 min.
Pour enough oil into a 2 quart saucepan to come to a depth of 2 inches
heat over medium to high heat about 320'f
Put chicken in the batter mix and coat
Drop the battered chicken carefully into the hot oil and fry until golden brown (2 min.) Then remove and drain on paper towels
Honey Sauce
3 tablespoons honey
1/4 cup sugar
2 tablespoons ketchup
1 tablespoonwhite vinegar
Pinch of salt
Mix all ingredients in a bowl & set aside
When the chicken is fried heat Honey Sauce mixture in a clear frying pan over medium-high heat
Stir until mixture bubbles
Mix chicken pieces into sauce
Serve immediately
Optional: sprinkle with chopped green onions & toasted white sesame seeds
