^A good way to find very large lists of the people who worked on the parks is to look for the TEA Award programs for the years the projects won TEA awards (typically the year following their opening), on Issu or google.

Shanghai was mainly Gen III WDI who are not known among fans the way Gen II are.

Some key Shanghai designers off the top of my head:
Bob Weis, Lead Executive Designer: an architect who led the design of Disney-MGM Studios at a young age. SDL got him promoted to head of WDI.
Luc Mayrand, Treasure Cove Lead Designer: He's a very good illustrator who's work on PotC: Battle for Treasure got him promoted to head of WDI-Asia (Joe Lanzisero's formerly-held title; he's out).
Scot Drake, Tomorrowland Lead Designer: He generously posts a lot of artwork on his personal site and is now head of WDI's Marvel Portfolio.

I'd be curious about who was the lead of SDL Fantasyland or Gardens of Imagination. Douglas Rogers - who designed the look of Tangled's tower and other environments in the movie - as well as HKDL's new castle - was the originator of Shanghai's Storybook Castle (he likes onion domes).

Chris Turner is the prolific WDI artist whose illustrations/storyboards have been published online and in books alot in last decade... he seems to work on every major project. http://christurnerart.com/

Chris Merritt, another gifted illustrator, worked on Mickey Ave.
David Damron & Stephan Martiniere are brilliant outside concept illustrators who were contracted to visualize Adventure Isle, Mickey Ave & Treasure Cove. There were many contracted third party designers/firms (often ex-WDI) that had input on SDL.

Hong Kong was mainly designed by Gen II greats, often associated with Disneyland Paris, such as Tom Morris (overall lead), Tim Delaney (Tomorrowland lead), Skip Lange (Adventureland lead) and Ahmad Jafari (architect) - all now retired from WDI.

The TEA website is probably an easier place to start. Unfortunately Shanghai Disneyland’s credits list does not include specific projects.
