Spray mist fans?
I needed one for the first time ever this summer. (92 degrees at 10:00 at night! Give me a break.)

Anyway, the spray mist fan was only needed for three or four days; but, for three or four days, the mist fan was needed!

(For kids) autograph books, activity books (and maps of the road trip route, printouts of the license plate game, etc.) with washable markers, granola bars and fresh fruit, card games, art supplies (e.g., materials to weave a friendship bracelet)

(For adults) sample-size tissues, gum, mints, disposable ponchos, mini-flashlight, neck pillow, magazines/paperbacks, deck of cards

(For anyone) new toothbrushes, sunglasses, sun-protecting lip balm and/or sunscreen stick

Look for an insulated water bottle that won't sweat and get everything wet in your bag. We'd freeze it the night before and add water to it during the day to drink. When empty, we'd refill it with a cup of ice water.

All good ideas. I have a related question. If I pack granola bars, water bottle, chapstick, sunscreen etc into a lightweight knapsack, where do I park the knapsack every time we go on a ride? That reminds me, I might buy 5 tiny knapsacks for all of us.

I have often brought a backpack to the parks with me and have never had a problem with rides, even roller coasters.

I think I misread your question. I thought you were asking about things for the road trip itself, that could be used in the parks (but not necessarily carried individually by each person). Having each person carry a separate bag would get pretty annoying pretty quickly, I would think, and the more bags you have, the greater the likelihood that somebody is going to forget theirs on an attraction.

If you can, I'd consolidate your things into one "park bag" for the entire party. I typically wear a crossbody purse with the essentials for my entire family while in the parks (First Aid mini-kit, phone, hand sanitizing wipes, ponchos if the day is rainy, etc.). It's small enough that I can wear it right onto attractions (tucking it over or under lap belts or safety harnesses as needed) and I never have to take it off. If we're traveling with additional "equipment" (e.g., kids bringing autograph books or hoodies), my DH wears a medium-sized backpack as our "family park bag," and takes it on attractions with him, placing it on the floor of the ride vehicle and threading a leg through it to hold it steady, or placing it in the compartment provided, where available (e.g., Soarin', Mission:Space, and BTMRR have mesh "holders" right inside the ride vehicle for loose personal items and bags).

Red apple slices. Dead serious, you can even buy a couple bags of them, and then put them in ziplocks if you don't want to cut them yourself and they're awesome for hunger craves. No peeling or washing at that point and they're sweet. Also, obviously cheaper for a snack than a churro, even if you shouldn't be totally replacing your Disney park churro diet
