Sit-down restaurants closed before?

Have sit-down restaurants at the parks ever closed down forever before, to be replaced by some place not a food space (either an attraction or just a shop)?

I don't know what info you want specifically on full service restaurants in the parks, but a good place online to go that I frequent is Walt Disney World's official page's dining pages. You can explore their menus and even make reservations from there. Perhaps you already visited there and want more info on guest experiences?

I was referring to whether or not table services places have ever closed for good for something else.

Disney Junior Live on Stage and it's many versions replaced the Soundstage Restaurant.

Quite a few nice QSR have. Odyssey, Soundstage restaurant and Sunrise Terrace spring to mind. Diamond Horseshoe isn’t what it was either.

Yes the Soundstage restaurant and Catwalk Bar both closed to make way for Disney Jr. as well as Studio catering Co. for the future Galaxy's Edge in DHS.

When I said "info", I wanted to focus on whether any table service places were closed permanently. Not quick service places, which @marni1971 and @NiarrNDisney mentioned.

Look it up. I was used for various things, last as Peter Pan's meet and greet before it was reconstructed as the Skipper's Canteen.

The Adventureland Veranda was not a table service place. It was quick service.

Bonfamille's at PO:French Quarter is the first one that popped into my head. Currently just a rarely-used backstage space.

Ariel’s in the beach club was closed and is now only used for private events. Fulton’s crab house has been closed and remodeled and reopened as Paddlefish

Diamond horseshoe is now open daily as a table service family style meal. Has been for over a year now.

The only thing that kinda fits your parameters is the ABC Soap Opera Bistro at DCA which closed to become Disney junior/playhouse Disney.
