from my December trip at Boma...

Banana Bread Pudding with Vanilla Sauce - Boma at Animal Kingdom Lodge

Yield: 12 servings


Ingredients

½ pound
Cubed Day-old Brioche, Croissants, Challah, or Texas Toast

1 ½ cups
Milk
1 ½ cups
Heavy Cream
1 cup
Sugar
5 each
Whole Eggs, beaten
¾ teaspoon
Cinnamon
3 each
Bananas, sliced into ½ inch pieces
4 tablespoons
Butter, cut into small cubes


Method of Preparation


1. Heat oven to 300o.
2. Mix sugar and cinnamon together. In a separate bowl, beat the eggs, then add the milk, cream, and cinnamon sugar.
3. Place half of the bread cubs in a 9x9 square or round pan. Cover with the sliced bananas, followed by the remaining bread.
4. Pour cream mixture over the entire dish, filling it 2/3 to ¾ full. Press top bread layer into cream mixture to prevent the bread from drying out. Add more custard if necessary.
5. Place butter chunks on top of bread pudding.
6. Bake for one hour or until an inserted knife comes out clean.
7. Let sit for 20 minutes. Serve warm with chilled vanilla sauce.
VANILLA SAUCE

Ingredients

1 ½ cups
Heavy Cream
¾ cup
Milk
¾ teaspoon
Vanilla Extract
4 ½ tablespoons
Sugar
1 tablespoon
Cornstarch
3 large
Egg Yolks
Method of Preparation


1. Bring the heavy cream, milk, vanilla, and sugar to a boil over medium heat, stirring occasionally. Remove from heat.

2. Combine cornstarch with egg yolks.

3. Once liquid boils, temper some of the liquid into the yolks and stir vigorously. Then return tempered yolks into the pot.

4. Turn off the heat and stir continuously until well combined and thickened.

5. Transfer the sauce into a bowl and set over an ice bath to cool.

Ingredients


2 ounces
Red Onion, diced
2 pounds
Cooked Lentils (cook 20 minutes in salted boiling water)
1 pound
Cherry Tomatoes
1 pound
Hearts of Palm, sliced a quarter inch
1 ½ cups
Sun Dried Tomato Dressing (see recipe below)
4 pounces
Goat Cheese
¼ ounce
Chives
4 ounces
Toasted Almonds
To Taste
Salt and Pepper




Method of Preparation


1. Drain lentils and hearts of palm well. Combine all salad ingredients and mix gently with the vinaigrette.*

2. Garnish with a light sprinkling of goat cheese mixed with chives, salt and pepper.

3. Top with lightly toasted almond slivers.


* Salad ingredients will taste better if left to sit overnight to give the flavors a change to develop. Add the garnish before serving.




SUN DRIED TOMATO DRESSING

Ingredients


½ CUP
Balsamic Vinegar
1 cup
Olive Oil
½ tablespoon
Coleman’s Mustard
½ ounce
Sun Dried Tomatoes (soaked for 30 minutes in hot water)
2 teaspoons
Celery Seeds
1 tablespoon
Ground Coriander
To Taste
Salt and Pepper




Method of Preparation


1. First blend soaked and drained sun dried tomatoes with vinegar, then add the other ingredients except for the olive oil.

2. Drizzle olive oil in a slow steady stream while whisking or you may use a hand-held blender to emulsify dressing.

3. Add celery seeds last.

This says it makes 4 servings and calls for a full can of coconut milk. I think that may be a bit much - I plan to try this one out soon so I'll post how it goes!


KOKONUT RICE

Ingredients


1 cup
Basmati Rice (may substitute with jasmine or long grain rice)
2 tablespoons
Canola or Vegetable Oil
½ teaspoon
Minced Garlic
1/3 cup
Spanish or Red Onion, small diced
1 cup
Water
1 can
Unsweetened Coconut Milk (shake can well as the milk separates)
1 teaspoon
Kosher Salt
Pinch
White Pepper (optional)
¼ cup
Grated Carrots
¼ cup
Grated Sweetened Coconut
1 tablespoon
Cilantro, finely chopped (may substitute with parsley)




Method of Preparation


1. Place oil in saucepan over medium high heat. Sauté garlic and onions for one minute.

2. Add rice and stir until rice is coated with oil. Add water and stir well. Bring to a boil.

3. Add coconut milk, stir, and cover. Lower heat to a simmer. Let cook for 15 minutes undisturbed.

4. Remove lid and add reminder of ingredients except for the cilantro. Fluff and mix with a fork quickly. If rice looks too dry, add a couple of tablespoons of water.

5. Replace lid and let simmer for five minutes. Remove from heat and let set for five minutes. Fluff rice gently, taste and adjust seasoning if needed. Garnish with cilantro and serve.

Spicy Island Wing Sauce
8 oz Brown sugar
3.5 oz Roasted Red Peppers
2/3 oz. Habaneras
1/8 tsp Kosher salt
In a food processor, puree raw habaneras and roasted red peppers with salt.
Then add brown sugar; process until blended together



Wing Marinade
3.5 oz Roasted red peppers
3/4 oz Habaneras
1/4 oz Brown sugar
1/16 tsp Crushed red pepper
1/3 tsp Kosher salt
1/16 tsp White pepper
1 pinch Granulated garlic
2.5 oz Canola oil
6.5 oz Water

In a food processor, puree all ingredients together, except water and oil.

When totally blended, add oil and water



Chicken Wings
Chicken Wings – 16 ea

Marinade – 2 oz

Toss chicken wings in marinade. Refrigerate for 24 hours



Chicken Wing Plate
Marinated wings 16 ea
Wing sauce 3 oz
Leeks Garnish
Blue Cheese Dressing 4 oz.

Deep fry wing until cooked through. Drain, then toss in wing sauce.
Garnish with fine chopped leeks and serve with Blue Cheese dressing.

Ingredients:
1/4 cup
Vegetable Oil
1 each Whole Chicken (Cut into 8 pieces)
1 cup Onion Chopped Fine
1/2 pound Sliced Mushrooms
1 Tablespoon Chopped Garlic
2 each 14 ounces Canned Tomatoes
1/2 cup Red Wine
1 Tablespoon Fresh Oregano Chopped
1 Tablespoon Fresh Basil Chopped
1 Tablespoon Fresh Thyme Chopped
Method:
1. Heat a deep skillet over medium heat with oil.
2. Brown the chcken in the skillet, remove and set aside.
3. Brown the onions and mushrooms, add the garlic.
4. After the mixture has cooked, add the rest of the ingredients, including the chicken and any juices that are in the plate.
5. Simmer the mixture, stirring occasionally to break up the tomatoes. Approximately 30-35 minutes or until the chicken is tender.
6. Serve over fresh cooked pasta.
Sprinkle with fresh grated parmesan cheese if desired.

YIELD: Serves 6
Ingredients:
4 pounds Pork Shoulder
6 cups Water
8 Tablespoons Chile Powder
1/8 teaspoon Oregano
1/4 teaspoon Cumin
2 teaspoon Garlic
1 teaspoon Salt
5 pounds Masa Harina
1 pounds Lard
Pork Broth
1 pk. Corn Husk
Method:
Boil meat in water until tender. Remove the meat from broth, saving broth for dough and chile. Using a fork, shred the meat and place into a pan. Add 1-1/2 cups of the broth, chili powder, oregano, cumin and garlic. Simmer for 20 minutes or until meat is tender.
Cream lard in a mixing bowl. Add masa flour and mix. Add enough of the broth to make the dough spreadable with a table knife.
Rinse the husks and soak in water until pliable. Spread the center portion of the husk with 2 Tbs. of masa. Top with chile meat mix. Vary both amounts to your taste. Fold the sides of husks toward the center, the bottom up and the top down. Tie each husk with a narrow corn husk strip.
Pour 2 in. of water into a large kettle and arrange the tamales on a rack above the water level. Steam the tamales for about 40 minutes.

Raglan Road Irish Pub's Bread and Butter Pudding

Yield: 4 servings.

12 slices medium-sliced white bread

3 ounces salted butter, at room temp

2 ounces raisins

1/2 pint cream

1/2 pint milk

4 egg yolks

3 ounces super-fine sugar

Sauce of choice for serving

1. Butter ovenproof dish. Remove crusts from bread; butter on both sides and cut into quarters. Arrange layers of bread in triangles (overlapping slightly) in bottom of dish, scatter raisins on top. Cover with another layer. You should have some bread pieces leftover to use in Step 4. Press down gently with spatula.

2. To make custard, heat cream and milk in pot until it almost comes to boil. Remove from heat.

3. Whisk egg yolks and sugar in large heatproof bowl set over pan of simmering water until thick and whisk leaves a trail in mixture. Remove from heat and beat in cream mixture. Pour 2/3 of the custard over layered bread. Let stand 30 minutes or until bread has soaked up custard.

4. Heat oven to 350 F. Pour remaining custard over soaked bread and arrange remaining bread slices on top. Press down gently with spatula so that custard comes halfway up bread slices. Bake 30 minutes until custard is just set and top is golden brown. Serve immediately with sauces of choice.

Recipe note: A custard or butterscotch sauce works well.

NOTE: Yield: 1 Gallon -- You may want to scale this recipe down for household use.
Ingredients

12 ounces red wine vinegar
6 ounces liquid smoke
1 quart soy sauce
9 ounces molasses
1 quart water
9 ounces BBQ sauce
6 ounces Worcestershire Sauce
9 ounces corn oil
½ ounce ground ginger
5 ounces Dijon mustard
2½ ounces chopped garlic
10 ounces brown sugar
Method

Mix all ingredients together adding the brown sugar last. Place the flank steak in the marinade for 24 hours. Then grill until medium rare and slice against the grain.
Steak Seasoning
Ingredients

12 ounces Kosher salt
3 ounces black pepper, ground
10 ounces onion power
10 ounces granulated garlic
10 ounces paprika
4 ounces grounded turmeric
Method

Mix all ingredients together well. Store in sealed container. Season steak liberally and grill.

I would guess you marinate first, then use the seasoning before grilling...its not very specific.

1 t. Mustard Seed, toasted

Guinness Stew
from Rose & Crown, Epcot

2 pounds sirloin cubes
1 ounce olive oil
1 each dry bay leaf
8 ounces diced onions
4 ounces diced carrots
½ ounce chopped garlic
2 teaspoons fresh thyme
2 teaspoons fresh rosemary
¼ teaspoon red chili flakes
8 ounces Guinness stout
1 quart beef broth

Sear sirloin cubes in a large stock pot in a small amount of olive oil, add the bay leaf.
Once the meat has a good sear on it (browned), add the onions and carrots. Cook until the onions are translucent.
Add the garlic, thyme, rosemary, and chili flakes. Cook for one minute and add the Guinness.
Allow the Guinness to simmer for five minutes, then add the beef broth.
Simmer for 30 minutes. Liquid should reduce by at least 1/3.
Season with salt and pepper to your personal taste.
Cook’s note: To thicken stew if wanted, make a slurry of 1 ounce cornstarch and 2 ounces water and add to stew while at a simmer.

Ohana Breakfast Bread
Polynesian Resort​

Bread

1 3/4 cup of water
1 egg yolk
2 tablespoon shortening
4 1/2 cups High Gluten Flour
1/2 Tablespoon Salt
1/3 cup sugar
1 Tablespoon Instant Yeast

Coconut Mixture

1 Cup Crushed pineapple
1 cup unsweetened coconut
1 cup sugar
2 Tablespoon corn starch

Pineapple / Coconut Procedure

1. Combine Pineapple and Coconut in bowl
2.Combine Sugar and Cornstarch in separate bowl and mix well
3. Add sugar and cornstarch mixture into pineapple and coconut mixture and mix well
4 Refrigerate for one ( 1) hour

Bread Procedure:

1. Combine all bread ingredients in order of recipe in a mixing bowl and mix with dough hook until dough picks up on hook and the sides of the mixing bowl is clean
2. Let dough rise until it doubles in size
3. Roll out dough on floured surface until it is 2 inches thick
4. Next spread pineapple , coconut mixture over the top of the dough
5. Fold dough into itself and place n a greased 9x13 cake pan
6. cut dough into pieces with a pizza cutter and spread out pieces evenly in a cake pan
7. Let dough rise in warm oven (110ºF) about halfway up the pan
8. Bake at 325ºF for 20-25 minutes or until golden brown
9. Let bread cool, cut and serve.

Does anyone have the recipe for the great stuffed french toast at the Character Breakfast at Cinderella's Royal Table? I remember it had a stuffing of cream cheese and I think blueberries. Looked on all the sites posted in this thread and cannot find it on any of those. Help me out. Breakfast is in 7 hours!!!:snore:

Cinderella's Cheese French Toast

Breakfast
Cinderella's Royal Table
Magic Kingdom

3 each eggs
2 cups milk
1 tablespoon vanilla extract
3 tablespoons baking powder
6 tablespoons sugar
2 cups all-purpose flour
1 quart frying oil
6 each cheese Danish, cut into quarters
Mix eggs, milk and vanilla together and set aside. Sift baking powder, sugar and flour together and add to egg mixture. Allow to stand for 10 minutes.

Bring Shortening to 375°. Dip cheese Danish in egg batter and place dipped bread in fryer until golden brown on one side and turn over to brown the other side. Roll in cinnamon/sugar and serve.
