If you're going to stay onsite you should let the CM know about your anniversary at check-in, or call ahead of time. They might have some extra magic for you!
I'd plan a dinner reservation or two that are at more quiet restaurants. It'll will be cozier and feel more special, plus your waitstaff will be more interactive with you.
do a dinner at artist point if you're using the meal plan it'll cost two meals but it so worth it. my wife and go alone every few years and this is always on our plan. just take time to spend it together and dont rush anything. take the days as they come.

I've been to wdw 3 times with it being just my girlfriend and I since we started dating 4 years ago. I can tell you to take in all the small things. Of course the rides are fun but do a bunch of small things. One of our favorite things to do is resort hoping and best thing, it's free! (Our first 2 trips we were also on a college kids budget)
