Yes, you can add the Hopper option to a base non-hopper ticket. It's a good way to save money if you're not 100% sure you need to park hop. Takes about 5 minutes at Guest Services.

You can upgrade your non-hopper tickets at any point (so long as there is still at least one valid admission day remaining on the tickets). The cost will be the same regardless of whether you decide to upgrade it on your first day, or your next-to-last, so if you decided to upgrade, you'll want to do it early in your trip so you can get maximum use out of the parkhopper benefit.
