Yes, the room types are spread out. The only room type you (probably) won’t get in every building are the Grand Villas.

The studios are connected to a 1 BR villa by a lockoff door. This way they can rent each one individually or as a 2 BR villa. They have two entrances, one for the the villa and one for the studio. There are also dedicated 2BR villas that do not have a lock off door. They only have one entrance. I looked on Touringplans.com it looks like all buildings have studios.

This is correct! To add to the GVs, you are right, they are not in every building. I believe there are about 12 buildings total that have GVs.
