I guess as a minimalist at heart, I can't seem to get into scrapbooking. A lot of layouts / books have so much going on in each page.

Most of the ones I utilize do, but there are a lot of really good, simple layouts. If it makes you feel any better, I don't know any guys who are into scrapbooking

That looks great! I don't think that you need anything more to it. I love the fact that you didn't use Disney paper with Mickey's all over it. What a great start--keep posting as you complete the layouts--I'd love to see them.
