This is probably a dumb question, but we are boarding the Wish on December 5th, Mickey's Birthday. Does anyone know if they'll do anything special to celebrate it?

To answer your question though, no not much. Here's a personal navigator from 2016 - you can see that they acknowledge it but that's about it. You may also get it as a trivia question if you go to any of the trivia activities.
