StarChefs.com goes on to say that some red wines, like Pinot Noir is suited for fish. Also good pairings: Chardonnay, Cabernet, Gewürztraminer, Viognier, Pinot Blanc, Sauvignon Blanc, Riesling, sparkling wines, and even extra dry or brut champagne. Yes, champagne!
Stay away from: heavy, oaky California Chardonnays and big, tannic reds.

But get this, StarChefs.com points out that "there is no question that beer and sake (especially the new chilled sakes) are ideal choices for sushi." So since you are both beer drinkers and want to stick with beer, go ahead.
But if you want to try some wine, ask Disney if they carry Rosemount, Sémillon-Chardonnay (Southeast Australia), Mirassou, Monterey Pinot Noir (California), or McDowell Valley, Mendocino Grenache Rosé (California). All are mentioned with tasting Hamachi Sushi, Big Eye Tuna Sushi, and Big Eye Tuna Sushi.
