Going on a one day trip -- SW:GE and then whatever else I can manage!

I'm going on a trip during the hopefully slow time in January with my girlfriend who has never been. The catch is I'm only going for one day! My only requirement is that I hit RotR and Smuggler's Run in DHS. She is interested in seeing the floating mountains on Pandora in AK.

Anyone have some good ideas of ADRs in either DHS for lunch or Dinner in AK? Anything you think I have to take a first timer to see in an only 1 day long trip?

you'll have to spring for a ParkHopper
rope drop RofR - get up 90 minutes before opening and be at the gate
hope you get FastPass for FofP - or if you only can get Navi then arrive an hour before park closes and wait
for the rest of the day - whatever your heart wishes - if you park at Hollywood Studios take the Skyliner over to Epcot and take in some of that
or head over to Magic Kingdom instead

you wanted dining recommendations - I wouldn't eat at DHS - how about Epcot instead? World Showcase has a host of [pricey] restaurants or you can hoof it to Sunshine Seasons
