A roller coaster vs a slow moving dark water ride. Seems fair.
I'm wondering what you think is the better overall quality ride, not which you would like to ride more.
Yes they are very different rides but they are both top WDW rides and it's more interesting to see the results.

This makes absolutely no sense to compare these two rides. You might as well pick anything. Mad Tea Party vs. Dinosaur.
That’s a much easier choice to make tho, as that one isn’t even close to what’s the better ride, everything from queue, pre-show, ride, overall experience, Dinosaur obviously takes it. It can be a lot more difficult and interesting to see how two high quality (albeit different rides) compare, hence I wanted to see how the results would turn out because of their different ride types and all.

Everest is a very underrated and thrilling coaster, even without the Yeti at 100%. But this vote goes to Pirates. Even the WDW version. Other than perhaps Haunted Mansion, there is no better ride in the parks than Pirates. None I enjoy more and none with better quality or attention to detail. Classic Disney at its best, to this day.
Maybe we combine the two. "Pirates of the Himalayas in the Caribbean"
In an epic race across the frozen rivers, through snow-covered forests, and over deadly cliffs, Pirates battle the mythical YETI, who has discovered a portal to a lush and tropical Caribbean island.
