HELP!!!

I am in desperate need of the recipe for the Canadian Cheddar Cheese Soup found in all Disney cookbooks. Its the recipe from the Le Cellier Steakhouse. I asked for it once before on the mailing list and did get it...I am hoping that person is on here or someone else may be able to assist me....

I need the recipe for a party I am hosting....tomorrow..

This is a copy of the recipe that the waitress at Le Cellier Restaurant gave me so it's the real deal I assume.

Canadian Cheddar Cheese Soup

1 lb. Cheddar Cheese, Shredded
1/2 lb Bacon
4 strips Smoked Bacon, applewood
10 tbsp. Butter
5 cups Milk, warmed
1 cup Celery, finely chopped
1 length Leeks, finely chopped
2 Red Onions, finely chopped
1 1/2 cups Flour
1 quart Chicken STock
1 1/2 tsp. Tabasco Sauce
3 tsp. Worchestershire Sauce
To taste Black Pepper, freshly ground
To taste Kosher Salt
1 tsp Slightly Warm Ale

METHOD

1. Slowly heat milk.
2. Brown the bacon (separately from the smoked bacon) first, then after it is rendered half way, add the smoked bacon and render together.
3. Add the butter and melt.
4. Add celery, onions, and leeks, cook until translucent.
5. Add flour and mix thoroughly to form a roux.
6. Add chicken stock and simmer for 3 minutes.
7. Add warm milk and stir vigorously to thicken.
8. Cook out roux until thickened (it should NOT have a starchy taste.
9. Reduce heat to low, add cheese and stir until melted.
10. Season with Kosher salt, pepper, Tasbasco and Worchestershire sauce.
11. Just prior to serving, add warm ale.

Note: When re-heating soup, do not bring to a boil, as it will break down

Makes 1 gallon

Hey WDW Guy...

...I'm curious...How did your SOUP turn out? Was it a hit?
I made it and my family LOVED it. I substituted reg smoked bacon for the Apple smoke bacon because I couldn't FIND any apple smoked bacon at my local grocery store. I also put in less leeks cuz I'm not a leek fan. :hurl: It Still turned out great though even though I altered it a little. Mmmmmm:slurp:
