Well there's Liberty Tree with their 'all you care to eat' Thanksgiving platter. Not exactly a buffet, but no characters.

I forgot about Whispering Canyon Family Style too..
Whispering Canyon offers some kind of dinner skillet which is all you care to eat but it is one item on an otherwise traditional appetizer/entree/dessert menu.

In Animal Kingdom, dinner at Tusker House is without characters. but not breakfast or lunch.
Same deal with Hollywood and Vine at DHS.
Biergarten for lunch or dinner.
Liberty Tree Tavern during dinner is family style, all you can eat, but not a full buffet.
Boma at AKL - awesome choice, BTW
Cape May Cafe at dinner not breakfast
The Wave at Contemporary offers a breakfast buffet as an option - they also have a full menu. No buffet for any other meal.
Trails End at Fort Wilderness - all meals
'Ohana at the Poly for dinner, not breakfast
House of Blues offers an all you can eat gospel brunch Sundays only

The dinner shows at Poly & Fort Wilderness don't have characters in the traditional sense, but if you're avoiding characters because you are looking for an evening where you can chat versus a lot of noise, these dinners aren't exactly for you.

I'm sure I missed something or screwed something up, but I think that's mostly it for either buffet or all-you-can-eat dining options that are character-free.
