Booking dining when staying off property

YEs you must book each day at a time on 60 days out. I plan to book mine using "safety choices" where I miss out on my first choice. then sign up for free alerts at sites like mousedining and touringplans etc. If you Google there are a bunch. When alert comes in have to act fast. You can also do paid option if something is really important to you, which includes sms text alerts etc.

I just did an offsite/non-park trip and had a lot of luck booking reservations the day prior or the day of via the Disney app and open table. Definitely check open table as they always had stuff that wasn't available via Disney. As an editorial comment, I got to try some restaurants I had been wondering about and almost always had buyers remorse. Since we were staying offsite we could have eaten at much better places for a fraction of the price. I guess we just wanted a little Disney in our non-Disney trip, but I don't think we went to a single spot we will return to other than Jiko.

Does opentable have restaurants in park or just Disney springs and or hotels?

All of the ones I saw were Disney Springs. I believe that is the highest concentration of second-party owned restaurants, and they probably have the option to open booking beyond just the Disney app. I know other outlets like Yak and Yeti are not Disney owned, but I haven't noticed them on Open Table.

None in the parks, even where restaurants are operated by a group like Patina that use them elsewhere.

But some do come under the Landry card group which can also work for walk-ups. Rainforest Cafe and also Yak and Yeti, both at AK. Not sure if there are others.
