Does anyone know the cost of Uber or a taxi from the airport to the Disney hotels for two people?

Why not just use the buses. I think uber is over 100

Depends on which airport. From Sanford I think it is like $80 or so.

There is a fare estimator (scroll down halfway on the page) on the Mears site. (Note: click on the book Orlando taxi now photo, and the estimator will be at the bottom of the page.) Link is below. I just did a random search for the Orlando Airport to the Magic Kingdom, and it came to $70.06 (rate only for taxi, not including tip).
