What menu? Looking at the handful of photos of dishes floating around, it does seem fairly classy, but it's hard to make judgements on the # of credits based on pictures or a general description of cuisine unless you see the prices.

Originally, this was supposed to open in April.... the WDW site says "late-spring".... I don't suppose anyone has heard a revised opening date? Judging what we're seeing right now, it seems like April would be pushing it....

Where did you read that? http://www.intercot.com/discussion/showthread.php?t=149229 says to expect one credit, and the CM did not mention it requiring 2 credits when I made my reservation.

Yep, 3 hours. And yep, if a park is open until 1 or 2am normally, and there are extra magic hours, the park will stay open until 4am or 5am! That's rare, obviously, but it can happen in really busy periods. FYI, for a list of attractions/restaurants that are likely to be open...
