Wow, this is a tough one. I guess I underestimated the number of good rides at AK. When you see the list you realize how great that park is. My gut instinct was to go with Everest, but I love Kilimanjaro, FoP and Dinosaur. I voted FoP for what it's worth.

We're going in December and doing something similar- staying at Disney with 5 day park hopper tickets. Set aside a couple of days for Universal also.

This would be a very busy couple of days, but you could do 2 park hopper days at Disney (2 parks per day) and then spend the 3rd day at Universal (split day between their 2 parks). May not get to do see/do every single thing, but you would definitely get a variety of everything.
