Look at what happened to Vision: he looks pretty much unstoppable in Age of Ultron, and then one of Thanos' minions stabs him with a knife that's never explained that sidelines him for the other 85% of IW. Characters are unstoppable only until something stops them.

Disney makes more money from guests that are actually staying on site, versus ones that are pretending to. Guests really staying at the campground will eat at the restaurants, shop at the trading posts, and do some upcharge activities like horseback riding. Guests that book a phantom...

If you can bring it without paying baggage fees (not sure how you're traveling), I would definitely bring it. If you try it without the stroller and tap out, you don't want Disney stroller sticker shock to be part of the process... just a recipe for grumpiness IMO.

FWIW, I had a small cooler bag like this one (I'm pretty sure it was 12 can size) with a hard liner. I didn't bring the liner to the parks, because I knew about the hard-sided ban. I asked a friendly-looking security guard one time, and he said that if you could take the liner out, it was OK.
