If BB isn't open, you can take a bus to Winter Summerland but it is not an easy path. I think you have to go to Coronado Springs? If it is open, just bus over there from Animal Kingdom and you're there.
In my experience, al a carte places will charge the kids price, prixe fix and buffet will be adult pricing. I even asked the servers to just bring a kids portion at the prixe fix places for my daughter but they still brought out the adult portions.

There are rooms that the discount is only 10%. I need a hotel for the night before a cruise so I was leaning toward trying Caribbean Beach out - that resort only had a 10% discount so I went with Yacht which had a 25% discount.
Honestly, you might just want to plan some time every few days to do laundry. We usually go through 2 sets of clothes each day in summer at Disney since we swim in the afternoon and I'm not putting on sweaty clothes after I shower. I do what @nickys suggested and do the laundry while I swim...
Just remember, "rope drop" when staying offsite is not the same as it used to be because resort guests get in the park half an hour earlier than offsite guests. The top rides will already have waits by the time you can access them.
