Which animated Disney film is most deserving of a simple, Fantasyland style darkride?

I'd say The Jungle Book. I'd be perfect for DAK or Adventureland.

101 Dalmations, The Rescuers, The Incredibles and Aladdin would all be great too. Some of the best classics just aren't meant to be darkrides though like Beauty and the Beast and The Lion King.
