Well, there are their 4 signature restaurants:

Then the 4 Table Service in the parks: Mythos, Confisco's, Lombard's Landing, and Fennagan's.

As far as variety is Counter Service, your best bets are Springfield, Thunder Falls Terrace, or either of the Potter restaurants.

To be honest, I am at Uni a lot, and I NEVER eat counter service in the parks. If I want a good quick pizza, I head out to Red Oven in CityWalk. Also in CityWalk are Antojito's, Cowfish, Vivo, and NBCSports Grill and Brew. All places I enjoy.
Not a single item on any in park menu over $20. Very reasonable prices and great selection IMHO

Edit: the sirloin at Fennagans is $21

My thoughts. Mythos was quality but not very exciting. It's a tourist-safe menu. Krusty Burger made us all sick but I sure enjoyed it. Our favorite at CityWalk is Bubba Gump. Cowfish is on my list.
