Well, welcome to news and rumor central. Nearly every bit of news or rumor passes through these boards (and usually before anywhere else). There are various rumors of the attractions that you mentioned. The Star Tours movie has been rumored ever since Episode I came out. Harry Potter has his own thread (which I've been staying out of). You can find the most current HP info there. There is a strong rumor that the Universe of Energy may be re-worked in the near future with a Monsters Inc. theme. However, there is no official confirmation at this time.
What we do have official confirmation of is a rehab and slight re-theme of Pirates of the Caribbean to better correllate with the movie storylines. Also, a Finding Nemo show will replace Tarzan Rocks! in Animal Kingdom.
