[Help] Disney Culinary essays

Hello WDWMagic,
I am Gbruenin's son and currently in my local community college's culinary program. Around the end of our program, we need to hand in an essay or two about anything culinary related. My idea for the essays were about the ins and outs of the Food and Wine Festival, as well as a day in the life of a Disney kitchen. My ideas for each essay are as follows:

Essay 1:
Food and Wine festival
-countries represented
-cuisine from contries
-influence of cuisine
-where food is made in resort and brought to stands
-how much is made per stand (popularity base, quantity based)
-average consumption

Essay 2:
day in life of disney kitchens
-start & end of each day in the kitchen. (first shift to close)
-ordering food/where from/how much ordered per day/week
-prep per day
-any kitchens that make specific items spread across the resort
-speical events (gingerbread houses) and how they're dealt with the easiest way.
-average consumption
-Dining plans
-DDP
-Tables in Wonderland

Any extra ideas are more than welcome. If you know an article on a website or something that can help me out-a book, cast member willing to chat, site- please let me know via a reply on the thread or a PM to this accout
