Do the disneyland parks do anything special for Easter or the week before Easter?

I don't think they do much, they seem to do more for Three Kings Day, Lunar New Year, and Mardi Gras.

But there are some Easter buffets, and a few added items here and there. Candy Palace offered some Easter treats but I don't think Candy Palace will be done with its refurbishment by then,.
