Camera at the water parks?

I'm thinking about buying a waterproof digital camera to take with me to blizzard beach, typhoon lagoon and also discover cover on our upcoming trip.
Do the waterparks allow you to keep hold of a camera at all times? for example, would i be able to ride summit plummet (if i dare ride this again ) while holding a camera? I cant see there being much point in carrying one with me if I cant ride anything with it!

I Googled videos of people on Summit Plummet and there are many POV videos including some with smiling CMs looking right into the cameras before they let them go.
