In the old Grotto, which was partially visible from outside (through an opening covered by a waterfall), the shell turned around. When Ariel had a Grotto in Disneyland this was how it operated, too.

I haven't gone through the new version in the MK yet, though.

Her shell still spins around.

When the current Ariel is done with her shift, the shell spins and the Ariel her just finished is assisted off of the shell. The next friend sits down and is spun straight through. This means that to guests Ariel is only gone for 2 or 3 minutes tops.

This usually leads CM's to use the phrase, "Ariel is just heading back to check on Flounder! She'll be back soon," or some variation on that.
