The mythical creatures land would have been Beastly Kingdom -
http://www.theneverlandfiles.com/disneyworld/beastlykingdom.php - but that would have been where Camp Minnie-Mickey is now.
I think I'd replace CMM with BK. CMM really has nothing but FotLK, and IMHO that belongs in either Africa or Adventureland. I can't really imagine BK behind Everest where all that land is, so If I could, I'd gut CMM and replace it with...
Beastlie Kingdomme
When I think of BK, I can't help but think Harry Potter. IMHO it's a shame Disney didn't get the rights to HP because I think that could've become BK, and it would've easily turned DAK into a full day park. My version of BK would be very similar to the original, only rather than spliting it by Good and Evil, I've split mine by Lost Continent-style and Jules Verne-style.
As you enter BK, just picture the Lost Continent of IoA. You'll find lots of weird sculptures and stuff such as this one...

The first section is kinda like Mickeyville (
http://disneyandmore.blogspot.com/2008/11/mickey-ville-toon-town-that-never-was.html) (It still needs a name). You enter through a gate formed out of the root of a tree. There's lots of shops/restraunts, and two attractions.
The first is a show that stars Merlin and a cast of creatures he takes care of. I like to imagine it as the class Hagrid taught in the third book, but with Disney Magic. It'll be filled with humor and lots-o'-fun!
The second attraction is Merlin's Garden Trail (I think it may need a new name). It's pretty much the Cretaceous Trail, but with mythological creatures, and rather than inanimate objects it includes AA's (with a few of them being the Living Character ones). This would take the place of the unicorn maze, which is somthing I was never really fond of...
Eventually, you'd make your way to the "Evil Side" of BK. Of course, it includes the famed Dragon Tower. I've tweaked the story though. Rather than having bats help you retrieve(sp?) the treasure, Merlin needs you to go in and get something for him (I'm not sure what yet) that he needs for his magic. Obviously the climax of the story is when you encounter the dragon.
The Jules Verne Section (it can't be called Mysterious Island bc it's not an island) is a town inside a volcano and would be very similar to Mysterious Island. It too includes shops and restraunts including one made entirely of glass. The attractions in this area include 20k, Journey to the Center of the Earth, and an all new original show about a Dragon Hatcher.
The Dragon Hatcher show would feature a Dreamfinder type person who hatches dragons. It would include puppetry, 3D films, and lots of other special effects.
So, what do you guys think?
