I think it's great! Such a fantastic actress, and her voice is so perfect for this sort of role - excellent casting.
I hope she rolls around on that wheel somehow, that would be awesome to see!
Actually there is a huge demand for meatless foods, be they chosen for health, lifestyle or religious reasons. A place like WDW draws an incredibly diverse cross-section of people from all over the planet. I think you may be a bit myopic here.

I find the lack on on-menu veggie choices a MAJOR oversight. We were excited to try eating there in a two weeks, but maybe we will skip this one. Lame.
You must be mistaken - you are inside a completely different structure. There is some scenery and some lighting effects inside Big Thunder, and I believe some colours may look alike; but one can cannot see the interior of Splash Mountain from there.
I don't see why Florida would be used for a film - It's far too esoteric for a whole attraction. California was only chosen because it had to fit into the focus of Disney CALIFORNIA Adventure.
I am looking forward to an eventual new film, but I would imagine it would have a much broader scope.

No, Universal Orlando Resort (Universal Studios Park and Islands of Adventure) and Walt Disney World Resort are two completely separate entities in the Orlando area.
